Ricotta Pikelets
250g goat ricotta
1/4 cup milk
3 eggs
65g plain flour
2 tbs olive oil
pinch salt
1/4 cup sugar (optional)


mix flour and milk together; beat eggs with fork, add ricotta, oil, flour mix and salt. Add sugar. Stir until blended. Drop tablespoons onto hot pan and flip when bubbles form. Remove when both sides lightly browned. Serve as sweet or savour with chopped tomatoes and basil or chives; honey or fresh fruit.
